Inacio is one of our first direct trade partners and he`s doing some amazing work in Mata de Minas. São Sebastião do Anta the region Inacio`s farm resides is not that well known for coffee growing, in fact Inacio`s father primarily traded in conventional coffee`s during his youth. This was indoctrinated by green traders, who told Jairo he would never be able to produce specialty grade coffee on his farm period. Even Inacio himself was not intending on taking over the farm from his father, but when Jairo came down with a serious illness Inacio returned to the fazenda and his passion to continue his fathers legacy blossomed.  On his father passing, Inacio made it his mission to improve the farm from the ground up. He`s a young ambitious farmer that is open to new ideas from soil management, processing to drying and the results in the cup really speak for themselves. The farm is small enough that no mechanical picking machines are used, which is generally uncommon in Brazil. The care and attention to detail on picking and processing is paramount to Inacio, he believes that by investing in the farm he can lift the entire community up. Even on his second harvest the community was benefiting immediately as the prices he had achieved had greatly increased from when the farm was focussed on high yield conventional production.  What`s even more impressive is that these are in fact the same coffee plants that were sold as conventional coffee. In the past they were scoring sub 80 points for market sale but now with Inacio`s fuel to change, he`s already pushed this lot up to 86 points. We are so incredibly proud of the achievements of Fazenda Jairo Soares and think the best is still to come!

Diego is an absolute genius when it comes to advanced methodology in coffee processing. His standard model for products uses carefully selected local micro bio-organisms to influence the coffee during fermentation instead of relying on the random microbial load from the natural biome. Rather than using standard anaerobic fermentation tanks he uses precise bio reactors to ferment the product measuring everything from time, temp, ph, sugar content and microbial load.  The kind of influence you get from this kind of industrial level fermentation is definitely out there. You are not going to taste anything like the coffee`s that Diego produces and this Castillo is of course no exception when it comes to the absolute mind bending outcomes Diego achieves from each of his coffees. Expect notes of turkish delight, raspberry and lychee.

This classic Brazil is heavy on chocolate & hazelnut and has a slight cherry note. Its round body and lingering taste delivers the perfect kick for those early mornings or late nights! Origin: Brazil  Region: Mantiqueira de Minas  Process: Natural  Variety: Yellow Catuaí  Producer: São Bartolomeu Altitude: 1250 masl  Creuza comes from a family of coffee producers and grew up on the farm with her parents. Learning the trade from a very young age. When she married Roberto Carlos, the pair received a property inheritance to begin their own coffee operation. They planted their own seedlings and worked hard to cultivate their coffee. Early on the farm was hit by a hailstorm and much of the crop was destroyed. It took a great effort and lots of determination, but the couple were able to repair the damage and resume their coffee production. Many years later, Creuza and Roberto have two children and have been teaching by example through their hard work in the field. Producing high quality, big bodied, full-on chocolate coffees that make for great espresso or classic filter cups. This lot of Red Catuai coffee underwent natural processing. Catuai was developed by the Instituto Agronomico (IAC) of Sao Paulo State in Campinas, Brazil by crossing Mundo Novo and Caturra varieties. Catuai coffees are cultivated widely across Brazil, and are known for their high productivity potential. Creuza’s farm is located in the Mantiqueira de Minas region, a demarcated area of 25 municipalities. The area is located on the northern side of the Serra da Mantiqueira mountain range in the southern part of the state of Minas Gerais. It is officially recognized as an Indication of Origin for its tradition and worldwide reputation of producing coffees with unique sensory profiles. While a lot of coffee growing in Brazil is very industrialized, most farmers in Mantiqueira de Minas are smallholders that manually harvest their crops. These practices along with favorable growing conditions make it one of the more exciting coffee regions in Brazil.

Our fun and well balanced espresso from Colombia. Great mouthfeel, slight acidity and a tasty pairing of apple, mandarin, honey and chocolate biscuit. Great with milk too!  Current Lot  Origin: Colombia  Region: Nariño  Process: Washed  Variety: Caturra  Producer: Aponte Station  Altitude: 2150 masl  This coffee is grown by various smallholders of the Inga community in Aponte, descendants of the ancient, pre-hispanic Incas. During the western conquest of Colombia, they remained isolated high in the mountains which became their natural refuge. They did not resume significant contact with the rest of Colombia until the second half of the nineteenth century. In the 1990’s, the mountains were controlled by guerrilla groups, drug traffickers, and paramilitaries and the Inga’s were forcibly involved in poppy and heroin production. In the last decade the mountains have become a safe zone for the Inga tribe, illegal crops were eradicated to give way to a new culture: coffee!  The Caturra variety has been planted in the Inga territory, on smallholder properties in the Resguardo Inga Aponte, at an average of 2150 meters above sea level. This elevation, combined with the Galeras Volcano constantly shedding nutrient-rich ash, makes for an exceptionally complex and sweet coffee. The coffee is depulped and fully washed in the Aponte. Aponte is situated in the Nariño department, on the border with Ecuador. The region counts thousands of smallholder coffee producing families. The three ranges of Andean mountains converge in Nariño, presenting ideal altitudes and fertile soil for high grown Arabica production. After decades of terror by armed militias and drugs traffickers, this small region has in the last years become a respected nucleus of coffee innovation in Colombia.

Honduras / Marcala / Natural Note de gust: Cherry, Nociatella, Raspberry Jam, Violet Profil de prăjire: Filtru    Prajită de Wide Awake în Bruxelles, Belgia.    A sweet red-fruit beauty with a floral finish. Cherries, raspberries and hazelnuts are all over this coffee. Truly the perfect afternoon delight.    Origin: Honduras  Region: Marcala  Process: Natural  Variety: Catuaí  Producer: Marysabel Caballero  Altitude: 1600 masl  We have long wanted to work with the Caballero family in Honduras and are very happy we were able to source this lot from them. Marysabel Caballero and her husband Moises Herrera are working with over 200 hectares of coffee trees. They are 2nd and 3rd generation coffee farmers and have been awarded many times for their amazing cup quality.  Since inheriting the farm from her father, Marysabel has invested a lot of time and resources, both in new equipment and in the planting of new coffee varieties. The main cultivar is Catuaí but they also grow Java, Pacamara and some geishas. They produce their own organic fertilizer which has greatly contributed to the farm’s soil health, and hence the plants’ nutrients. They grow oranges, avocados, flowers and bananas to maintain biodiversity and provide shade for the coffee trees.  The overall cup quality has increased to the point where many of their lots are scoring 87-88. Marysabel and Moises have done very well in the Cup of Excellence for many years, even achieving 3rd price at the annual SCAA “Coffee of the year” competition in 2010.  This specific lot is a natural processed Catuaí. Drying natural coffees is very difficult in Marcala where it’s generally wet and windy during the drying season. For his natural lots, Moises is only picking the ripest cherry and drying them on covered raised beds. Initially the layer of cherry on the bed is very thin so the coffee can dry faster. As it dries, the layer is made thicker. But still drying can take up to 40 days depending on the temperatures.  The cup has a rich dark fruit aroma ; fruit like red berries, black grape and plum flavors. It has a rich and dense mouthfeel, well-structured and intense. Complex and floral finish.

This lot is a Venecia (a natural mutation from Bourbon) that underwent a 96h anaerobic fermentation. This cup is incredibly juicy, has great floral notes as well as a quite `magic` acidity. It’s a versatile coffee that can be brewed in many different ways. We’re eager to see where you take it. Origin: Nicaragua  Region: Matagalpa  Process: Natural Anaerobic (96h)  Variety: Venecia  Producer: Finca Aurora  Altitude: 1200-1400 masl  Finca Aurora is owned and managed by Dr. Enrique Ferrufino (surgeon by trade) and his wife Silvia. They bought the farm in 2004 with the mission to inspire people through coffee. Finca Aurora is a playground where Enrique experiments with different coffee varieties and processing methods. All this is done in a biodynamic environment, meaning farming is done in tune with the local ecosystem. They only use renewable energy and conserve water and natural habitats. The native trees provide the plantation with shade and fertilize the soils with organic matter. The Ferrufino family invested heavily in providing workers with fair wages, safe living conditions, health services, food, and education.  We sourced this coffee through our friends at Sucafina Specialty who have been working with Enrique for years. The variety of the lot is the lesser-known Venecia plant, a natural mutation from Bourbon originating in Costa Rica. The plant is well adapted to rainy conditions and is compact, making it possible to plant more densely per hectare. Venecia produces large beans and has a high quality potential. Finca Aurora is one of the first farms in Nicaragua with a fully integrated coffee operation on-site. They produce, wash and dry the coffee. Afterwards they mill, sort and bag. It’s rare to have this full chain on one site and allows the family full control over the quality. This lot underwent a 96h fermentation in dry, airtight tanks. In this oxygen-free environment, anaerobic microbes flourish and alter the coffee`s structure and taste. After the extended fermentation, the cherry is laid to dry on raised beds for 35 days.  Nicaragua may not be your first thought for a competition coffee but we were stunned by this lot. Usually very extended fermentations like this one (96h) lead to very boozy, borderline phenolic coffees, but not here. This cup is extremely juicy, has great floral notes as well as a quite ‘magic’ acidity. We taste blood orange, fermented pineapple, maple syrup and chamomile. But it’s a versatile coffee that you can brew in many different ways. We’re eager to see where you take it.

300 ml Ne-am propus să producem cea mai pură, puţin procesată apă tonică, pentru a pune în valoare gustul și aromele naturale ale scoarţei de cinchona (arborele de chinină). Apa tonică KOFI TI are un gust dulce-amărui-astringent complex și o frumoasă culoare ruginie.  Cinchona este un arbore înalt endemic pădurilor ecuatoriale din America de Sud. Este singura plantă care conţine chinină naturală. Recoltată toamna din arbori mai bătrâni de 6 ani, scoarţa este folosită de localnici pentru diferite efecte medicinale precum combaterea infecţiilor și sporirea capacităţii de muncă.  INGREDIENTE: infuzie de cinchona (apă filtrată, scoarţa copacului de chinină); zahăr brut din trestie; acidifiant: acid citric; dioxid de carbon.
